The first thing we thought when making bacon was “Where can you get pork belly? I’ve never seen it anywhere!” Weirdly, though it was right in front of our noses. Major supermarkets carry it slightly tucked away in the packaged meat section, usually 1 kilo slabs shrink wrapped and next to the flavoured roast things that no one seems to buy. You want to be fancy? It’s highly recommended you get some form a butcher. You’ll probably need to pre-order it but the freshness will be worth it! Give it a try.
